Method
Tomato Topping
Prepare tomatoes
Core and seed the heirloom tomatoes: cut into quarters, gently scoop out seeds and excess juice, then dice flesh into roughly 1/4-inch pieces until you have about 3 cups. Place diced tomatoes in a medium mixing bowl.
Combine aromatics and season
Add the minced garlic, chopped basil, 3 tablespoons EVOO, 1 tablespoon red wine vinegar, 1 teaspoon sea salt, 1 teaspoon freshly ground black pepper, and optional 1 teaspoon lemon zest to the bowl with tomatoes. Gently fold to combine, making sure the garlic and basil are evenly distributed without smashing the tomatoes.
Taste and adjust: let the mixture sit 10–15 minutes at room temperature to allow flavors to meld. Taste and adjust seasoning with more salt, pepper, or a splash more vinegar or EVOO as needed before assembly.
Toasted Baguette
Slice the baguette
Preheat oven to 425°F (220°C). Using a serrated knife, slice the baguette on a slight diagonal into 12–16 pieces about 1/2-inch thick, depending on length of loaf and desired serving size.
Brush and toast
Arrange slices in a single layer on a baking sheet. Brush the tops lightly with the 2 tablespoons of olive oil. Toast in the preheated oven 6–8 minutes until golden and crisp at the edges, then switch to broil for 30–60 seconds if you want extra color—watch carefully to avoid burning.
Garlic rub
Remove toasted slices from the oven. While still warm, rub the cut side of the halved garlic clove over the top of each toast once or twice to impart a subtle garlic aroma. Optionally sprinkle a light pinch (about 1/4 tsp divided) of coarse sea salt over the toasts.
Assembly & Finishing
Spoon and serve: Using a slotted spoon or tongs to avoid excess liquid, mound about 1 to 2 tablespoons of the tomato topping onto each toasted baguette slice. Arrange on a serving platter.
Garnish: Top each bruschetta with a small whole basil leaf. If desired, lightly drizzle each piece with a scant 1/4 teaspoon of balsamic reduction for sweetness and visual contrast.
Serve promptly: Serve immediately so toasts remain crisp. If you must hold the topping, keep tomato mixture at room temperature up to 1 hour; avoid refrigerating assembled bruschetta to prevent sogginess.
