Mix and portion

Place the ground beef in a bowl. Sprinkle the kosher salt, black pepper, garlic powder, and smoked paprika (if using) over the meat. Add the Worcestershire sauce. Gently combine with your hands or a spatula until evenly mixed—do not overwork (mix just until combined).

Form patties

Divide the mixture into two equal portions (about 8 ounces each). Form each portion into a loose ball, then press into patties roughly 4–4.5 inches in diameter and about 3/4 inch thick. Make a shallow dimple in the center of each patty with your thumb to help them cook flat.

Prepare toppings

Slice the tomato and red onion thinly. Tear or wash the lettuce leaves and pat dry. Have pickles and cheese slices ready. In a small bowl combine mayonnaise, mustard, and ketchup to make a simple burger spread; set aside.

Toast buns

Heat a skillet or griddle over medium heat. Spread softened butter on the cut sides of the buns. Place buns, buttered side down, on the hot skillet and toast until golden, about 1–2 minutes. Remove and keep warm.

Cook patties

Increase heat to medium-high. Lightly oil the skillet or oil the grill grates. Place the patties on the hot surface, dimple side up. Cook without moving for 3–4 minutes until a brown crust forms. Flip and cook another 3 minutes for medium-rare to medium. Place a cheese slice on each patty in the last minute of cooking, cover the pan or close the grill lid briefly to melt.

Assemble burgers

Spread the prepared burger spread on both bun halves. Place lettuce on the bottom bun, then the cheese-topped patty, tomato slice, onion, and pickles. Cap with the top bun and press gently. Serve immediately.
