Prepare sausage

Slice the andouille sausage into 1/3-inch thick rounds. Heat a medium skillet over medium-high heat and add 1 tablespoon butter. When butter foams, add sausage slices in a single layer and sear 2–3 minutes per side until browned and slightly crisp. Remove to a plate and keep warm.

Toast muffins and wilt spinach

Split the English muffins and butter cut sides lightly. In the same skillet over medium heat, toast the muffins butter-side down until golden, 1–2 minutes. If using spinach, add to the skillet with a pinch of kosher salt and wilt quickly in the residual fat for 30–45 seconds, then remove and divide between serving plates as a bed.

Poaching setup

Bring 2 liters of water to a gentle simmer in a wide, shallow saucepan. Add 1 tablespoon white vinegar and 1 teaspoon fine salt. Reduce heat so the surface shows small bubbles but not a full boil.

Poach eggs

Crack each egg into a small bowl. Create a gentle whirlpool in the water with a spoon and slide one egg into the center. Poach 3 minutes for a runny yolk or 3 1/2–4 minutes for slightly more set yolks. Remove with a slotted spoon, drain briefly on paper towel. Repeat with remaining eggs. Keep eggs warm in a bowl set over a pan of warm water if needed.

Chipotle Hollandaise

Melt butter

In a small saucepan over low heat, melt 8 tablespoons unsalted butter until fully liquid and warm but not foaming. Keep warm.

Whisk yolks

In a heatproof bowl or the top of a double boiler, combine 3 egg yolks and 1 tablespoon lemon juice. Whisk vigorously until slightly thickened and pale, about 1–2 minutes.

Tempering and emulsifying

Place the bowl over (not touching) simmering water and continue whisking. Slowly drizzle in the warm melted butter in a thin steady stream, whisking continuously to create a smooth emulsion. If sauce becomes too thick, whisk in up to 1 teaspoon hot water to adjust consistency.

Season and finish

Remove from heat and whisk in 1 teaspoon finely chopped chipotle in adobo, 1 teaspoon adobo sauce, 1 teaspoon smoked paprika, 1 teaspoon Dijon mustard, 1 teaspoon fine salt, and 1/2 teaspoon freshly ground black pepper. Taste and adjust: add a little more lemon for brightness or a touch more adobo for heat. Keep warm over a very low heat or in a thermos.

Assembly & Garnish

Assemble the Southern Benedict by placing toasted muffin halves on plates (on top of wilted spinach if using). Top each muffin half with 2–3 slices of seared andouille sausage.

Carefully place one poached egg on top of the sausage stack. Spoon 2–3 tablespoons of warm chipotle hollandaise over each egg, letting it cascade over the sausage and muffin.

Finish with a sprinkle of chopped chives, optional microgreens or parsley, a pinch of cracked black pepper, and a light dusting of smoked paprika if desired. Serve immediately.
