prep potatoes
Wash and scrub the potato. Leave the skin on for texture. Dice into 1/2-inch cubes so they cook evenly. Pat dry with a towel to remove excess moisture.

Heat a large skillet over medium-high heat. Add olive oil and butter. When shimmering and the butter is melted, add the diced potatoes in a single layer. Let cook undisturbed for 3–4 minutes to develop a golden crust, then stir or flip pieces and continue cooking for another 6–8 minutes, stirring occasionally until tender and browned (total 10–12 minutes).

Add the diced onion to the pan when potatoes are about halfway done so it becomes translucent and caramelized. Sprinkle smoked paprika, garlic powder, salt, and pepper over the potatoes and onions. Stir to combine and cook 1–2 more minutes. Taste and adjust seasoning. Stir in chopped parsley if using. Transfer home fries to a warm plate and keep warm while you make the sandwich.
Bacon
In a separate skillet over medium heat, lay the bacon strips in a single layer. Cook until crisp, about 4–6 minutes per side depending on thickness, turning as needed. For faster cooking and more even crisp, cover briefly for the first few minutes then uncover to allow fat to render and crisp. Transfer cooked bacon to a paper towel–lined plate to drain. Reserve 1 teaspoon of bacon fat in the pan for eggs if desired; otherwise drain fat and wipe the pan.

Heat 1 teaspoon neutral oil or reserved bacon fat in a nonstick skillet over medium-low. Crack both eggs into a small bowl and slide into the skillet (or crack directly). For fried eggs with set whites and runny yolks, cook undisturbed for 3–4 minutes until whites are set and edges gently crisp. For over-easy, cook 2–3 minutes then flip and cook 20–30 seconds more. Season eggs with 1/8 tsp salt and 1/8 tsp pepper while cooking. If you prefer scrambled, whisk eggs with a pinch of salt and cook gently, stirring, until softly set (about 2–3 minutes).
melt cheese & assemble
Place the cheese slice on one piece of toasted bread. Put the cooked eggs on top of the cheese and cover the pan with a lid for 30–45 seconds to help the cheese melt if needed. Layer the cooked bacon strips over the eggs. Mash the avocado half with a fork and season with a pinch of salt; spread the mashed avocado on the other piece of toasted bread. Spread 2 tbs aioli over the avocado or on the bottom slice if preferred. Close the sandwich, press gently, and slice in half if desired.
