Grilled Chicken & Marinade
Prepare marinade
Mince the garlic. In a bowl, whisk together 2 tbs olive oil, 1 tbs balsamic vinegar, minced garlic, 1 tsp dried oregano, and pinches of salt and pepper.
Marinate chicken
Pat chicken breasts dry. Place in a shallow dish or zip-top bag and pour the marinade over them. Rub to coat thoroughly. Marinate at room temperature for 15 minutes or refrigerated for up to 2 hours.
Grill chicken
Preheat a grill or grill pan to medium-high (about 400°F / 200°C). Remove chicken from marinade and let excess drip off. Grill 5-7 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C) and juices run clear. Transfer to a cutting board and rest 5 minutes, then slice thinly across the grain.
Balsamic Vinaigrette
In a small bowl or jar, combine 1.5 tbs balsamic vinegar, 3 tbs extra-virgin olive oil, 1 tsp Dijon mustard, 1/2 tsp honey, 1/4 tsp salt and 1/4 tsp black pepper. Whisk or shake vigorously until emulsified. Taste and adjust seasoning.
Wrap Assembly
Prepare vegetables and cheese
Slice the tomato into 1/4-inch slices and season lightly with the two pinches of salt and pepper. Crumble the goat cheese into small pieces.
Warm tortillas
Warm each flour tortilla in a dry skillet over medium heat about 20-30 seconds per side or briefly in the microwave (15 seconds) until pliable. This makes them easier to roll.
Assemble wraps
Lay one warmed tortilla flat. Drizzle about one-third of the vinaigrette down the center. Place half of the sliced grilled chicken on top, then layer 1 cup arugula, tomato slices, and half the goat cheese. Drizzle another 1/2 tbs vinaigrette over the filling if desired. Fold the sides of the tortilla in, then roll tightly from one end to the other to form the wrap. Repeat with the second tortilla and remaining ingredients.
Finish (optional)
If you like a lightly crisp exterior, brush the outside of each wrap with a little olive oil or spray and grill on a hot panini press or skillet 1-2 minutes per side until golden brown and sealed. Optionally drizzle with 1/2 tbs balsamic reduction before serving.
Slice each wrap in half on the diagonal and serve immediately.
