Prepare the Toppings

In a mixing bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, olive oil, salt, and black pepper. Mix well and let it sit for about 10 minutes to allow the flavors to meld.

Prepare the Bread

While the topping mixture is resting, preheat your oven to 400°F (200°C). Slice the baguette or ciabatta into 1/2 inch thick slices. Arrange them on a baking sheet and brush lightly with olive oil.

Toast the Bread

Place the baking sheet in the preheated oven and toast the bread for about 5-7 minutes, or until golden brown and crispy.

Assemble the Bruschetta

Once the bread is toasted, remove it from the oven. Spoon the tomato mixture generously over each slice of bread. Top with diced mozzarella cheese if desired.

Serve

Arrange the bruschetta on a serving board. Drizzle with additional balsamic vinegar or olive oil if desired. Serve immediately.
