Chill glass

Place the old-fashioned glass in the freezer or fill it with ice water to chill while you build the cocktail.

Measure and combine

Add 45 ml Lyre's Dark Cane, 20 ml Lyre's Italian Orange, 45 ml fresh pineapple juice, and 2 dashes almond bitters into a cocktail shaker.

Add ice and shake

Fill the shaker with about 6 ice cubes (enough to chill thoroughly). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker feels very cold and slightly frosted.

Prepare to serve

Discard the chilling ice or water from the glass. Place one large ice cube into the chilled old-fashioned glass.

Strain

Double-strain the shaken mixture (use a Hawthorne strainer and a fine mesh strainer if available) over the large ice cube in the glass. This removes small ice shards and any pineapple pulp for a smooth texture.

Garnish & Glassware

Express orange oil

Hold the orange peel over the drink and give it a firm twist to express the essential oils onto the surface, then rub the peel around the rim of the glass to release aroma.

Garnish

Drop the twisted orange peel into the drink or set it on the rim, and add the fresh pineapple wedge to the rim or skewer it and rest it on the glass. Serve immediately.

Serving suggestion

Serve with a short stirring spoon on the side if the guest prefers to stir once to integrate flavors; enjoy cold.
