Add sweeteners & acid
Stir in 1/2 cup granulated sugar and 2 tbs honey. Add 1/4 cup apple cider vinegar, 1 tbs lemon juice, 3/4 tsp salt and 1/4 tsp black pepper. Bring the mixture to a gentle simmer over medium-low heat.

Simmer to reduce
Reduce heat to low and simmer, uncovered, stirring occasionally, until the mixture is syrupy and the peppers are very soft, about 15–20 minutes. Taste and adjust salt or heat (add a pinch more salt or a few flakes of red pepper if desired).

Thicken
Mix 1 tsp cornstarch with 2 tbs cold water to make a slurry. Stir the slurry into the simmering jam and cook another 1–2 minutes until the jam thickens and becomes glossy. Remove from heat and let cool to room temperature; the jam will further thicken as it cools. Refrigerate if not using within 1 hour.

Combine cheeses
In a medium bowl, combine 6 oz goat cheese and 2 oz softened cream cheese. Use a fork or small whisk to blend until smooth and homogenous.

Season & finish
Stir in 1 tbs honey, 2 tbs minced chives, 1 tbs milk (add another 1 tbs if you want a looser spread), 1/8 tsp salt and 1/8 tsp black pepper. Taste and adjust seasoning. Transfer to a small serving bowl or keep in the mixing bowl until assembly.

Toast the baguette
Preheat oven to 400°F (200°C). Slice the baguette into 1/2" slices. Arrange slices on a rimmed baking sheet. Brush both sides lightly with 2 tbs olive oil. Bake 8–10 minutes, flipping once, until golden and crisp. For extra crunch, broil 30–60 seconds at the end—watch carefully to avoid burning.

Garlic rub & finish toasts
Remove toasts from oven and, while still warm, rub the cut side of the halved garlic clove over the top of each toast for a subtle garlic note. Sprinkle lightly with flaky sea salt to taste.

Assemble bruschetta
Spread about 1–1.5 tbs of the goat cheese mixture onto each toast. Top each with 1–1.5 tbs of the cooled sweet n' spicy pepper jam. Garnish with small basil leaves or a few microgreens.
