    Preheat and prepare vegetables

    Preheat the oven to 425°F (220°C). Spread the chopped carrots and chopped onion on a rimmed baking sheet. Drizzle with 1 tbs olive oil, season lightly with 1/2 tsp salt and 1/4 tsp pepper, and toss to coat in a single layer.

    Roast vegetables until caramelized: roast the carrots and onion on the middle rack for 25–30 minutes, stirring once halfway through, until they are tender and have some golden-brown edges. Roasting brings out deeper flavor and keeps the final soup bright.

    Sauté aromatics

    While the vegetables roast, heat the remaining 1 tbs olive oil and the butter (if using) in a large heavy-bottomed pot over medium heat. Add the smashed garlic cloves and grated ginger and sauté for 60–90 seconds until fragrant but not browned.

    Add roasted vegetables and broth: when the carrots and onions are done, transfer them (and any pan juices) to the pot with the garlic and ginger. Pour in the 6 cups of vegetable broth and scrape any browned bits from the pan into the soup. Bring to a gentle boil, then reduce heat and simmer for 10 minutes to let flavors meld.

    Blend until silky

    Remove the pot from heat. Remove and discard the garlic cloves (they’ve already flavored the soup). Use an immersion blender to puree the soup until smooth and silky, taking care to avoid splatter. Alternatively, working in batches, transfer the soup to a blender and puree until smooth, then return to the pot.

    Finish and season: stir in the apple cider vinegar, and taste. Add the remaining 1 tsp salt (adjust to taste) and the remaining 3/4 tsp black pepper (adjust to taste). If the soup is too thick, add up to 1/2 cup warm broth or water to reach desired consistency.

Garnish & Optional Add-ins

    Make it lighter (lower-calorie cup ~45–120 cal)

    For a lighter serving, ladle hot soup into bowls and finish with chopped parsley (about 1 tsp per bowl) and a sprinkle of toasted pumpkin seeds (about 1 tbsp per bowl). Add croutons only lightly (a couple tablespoons) or omit for lowest calories.

    Make it richer (higher-calorie cup up to ~470 cal)

    To increase richness and calories, stir in 1 cup of full-fat coconut milk for a dairy-free option or 1/2 cup heavy cream for a dairy option. Heat gently (do not boil) for 2–3 minutes to combine. For maximum richness, add both cream and a drizzle of olive oil or chili oil on top when serving and a handful of croutons.

    Garnish and serve: ladle soup into cups or bowls. Add the chosen richer add-in or leave plain. Finish each serving with a tablespoon of croutons (if using), a sprinkle of toasted pumpkin seeds, a pinch of chopped parsley, and a tiny pinch of red pepper flakes or a drizzle of chili oil if you want heat.

    Storage: cool to room temperature, then refrigerate in an airtight container for up to 4 days or freeze in portions up to 3 months. Reheat gently on the stovetop, adding a splash of broth if thickened.
