Half Panini (Turkey Pesto)

Assemble
Spread 1 tbs basil pesto evenly over the cut sides of the ciabatta roll. Layer the sliced roasted turkey on the bottom half, then place the provolone slice on top of the turkey. Scatter the chopped roasted red peppers over the cheese. Season lightly with 0.125 tsp salt and black pepper to taste.

Grill
Brush the outside faces of the assembled sandwich with 1 tsp olive oil. Heat a panini press or skillet over medium heat. Place the sandwich in the press or skillet and press gently. Cook 3–4 minutes in a panini press or 2–3 minutes per side in a skillet, pressing with a spatula, until the bread is golden and the cheese has melted.

Finish
Remove from heat and let rest 1 minute. Cut to serve the half portion if you used a full roll; otherwise serve whole as the half portion. Serve warm.
Half Salad (Caesar-style, half portion)

Toss
In a medium bowl, combine 2 cups chopped romaine lettuce with 2 tbs Caesar dressing. Toss until leaves are evenly coated.

Season & Garnish
Add 1 tbs grated Parmesan and 0.25 cups croutons. Squeeze in 1 tsp lemon juice, then season with 0.125 tsp salt and black pepper to taste. Toss gently to combine.

Plate
Transfer the half salad to a serving bowl or plate and finish with an extra sprinkle of Parmesan or a small basil leaf if desired.
Soup (Tomato Basil, cup)

Sweat aromatics
In a small saucepan, heat 1 tsp olive oil over medium heat. Add 2 tbs finely chopped onion and 1 minced garlic clove. Cook, stirring, for 2–3 minutes until the onion is softened and translucent but not browned.

Simmer
Add 1 cup crushed tomatoes and 1 cup vegetable broth to the pan. Stir in 0.5 tsp sugar (if using) and 0.25 tsp salt and 0.125 tsp black pepper. Bring to a gentle simmer and cook 8–10 minutes to meld flavors.

Finish & Blend
Remove from heat and stir in 4 torn basil leaves and 2 tbs heavy cream (optional). For a smoother texture, carefully blend the soup with an immersion blender until silky (or transfer to a blender in batches). Return to low heat to warm through for 1–2 minutes—do not boil after adding cream.

Serve
Taste and adjust seasoning. Ladle into a cup or small bowl and garnish with a small basil leaf if desired. Serve hot alongside the panini and salad.
