Prickly Pear Syrup

Purée the fruit
Place the 0.75 cups prickly pear flesh, 2 tbs granulated sugar, and 2 tbs water into a blender or food processor. Purée until smooth, about 30–45 seconds.

Simmer into syrup
Pour the purée into a small saucepan and bring to a gentle simmer over medium-low heat. Stir constantly for 2–4 minutes until the sugar dissolves completely and the mixture thickens slightly. Do not boil vigorously.

Strain and cool
Remove from heat and strain the warm syrup through a fine-mesh sieve into a small bowl or jar, pressing with the back of a spoon or silicone spatula to extract as much liquid as possible and leave behind seeds and pulp. Let the syrup cool to room temperature (5–10 minutes) or chill briefly in the fridge if you prefer a cold drink.

Combine liquids
In a tall glass or small pitcher, pour 0.25 cups fresh lemon juice, 1 cup cold water (or sparkling water for a fizzy version), and the cooled prickly pear syrup (use all strained syrup from previous section). Stir well to combine.

Adjust to taste
Taste the lemonade and adjust balance if needed: add a splash more water if it's too sweet, or a little more lemon juice if you want it tarter. (Optional: if you prefer it sweeter, add 1 tsp sugar or simple syrup and stir until dissolved — note this optional sweetener is not included in the ingredient list.)

Add ice
Fill a serving glass with 1 cup ice and pour the prepared prickly pear lemonade over the ice. Stir once to chill and mix.
Serve and Garnish

Garnish the glass with 1 lemon wheel on the rim and a sprig of fresh mint. Serve immediately with a straw or stirring spoon.
