Sicilian Garlic Yogurt

Roast the garlic
Preheat oven to 400°F (200°C). Toss 3 garlic cloves with 1 tsp olive oil, wrap them in foil and roast directly on the oven rack or on a baking sheet until soft and caramelized, about 18–22 minutes. Let cool, then squeeze the soft garlic from skins.

Combine and season: In a medium bowl, whisk 1.5 cups Greek yogurt with the roasted garlic (smashed), 1 tbs extra virgin olive oil, 1 tbs lemon juice, 1 tsp sea salt and 1/2 tsp freshly ground black pepper until smooth and glossy.

Adjust texture and chill: If the mixture is too thick, stir in up to 1–2 tsp water or extra olive oil to reach a creamy dip consistency. Cover and refrigerate while you prepare other elements to let flavors meld (15–30 minutes ideal).

Finish: When ready to serve, transfer to a shallow bowl, drizzle 1/2 tbs extra olive oil over the top and dust with 1/4 tsp smoked paprika.
Whipped Feta

Prepare equipment: Use a small food processor or blender for a very smooth whipped feta. If you don’t have one, a sturdy bowl and an electric mixer will work but chiffonade will be less silky.

Taste and finish: With the machine running, add 1 tsp honey and 1/4 tsp freshly ground black pepper; pulse once to combine. Stir in 1 tbs finely chopped fresh oregano or dill by hand for fresh herb note.

Plate: Spoon whipped feta into a shallow bowl, create a slight well in the center, drizzle 1/2 tbs extra olive oil and sprinkle 1/4 tsp crushed red pepper flakes (optional).
Fresh Garnished Hummus

Prepare chickpeas: If using canned, drain and rinse chickpeas well. Reserve a few whole chickpeas for garnish if desired.

Blend hummus: In a food processor combine 1.5 cups cooked chickpeas, 3 tbs tahini, 2 tbs lemon juice, 1 fresh garlic clove, 1/2 tsp ground cumin and 1 tsp sea salt. Pulse to start, then stream in 3 tbs cold water and 1 tbs extra virgin olive oil while processing until smooth and creamy — 45–90 seconds depending on your machine. Scrape sides as needed.

Adjust seasoning and texture: Taste and add more lemon, salt or a splash more water to reach desired consistency. Transfer to a shallow serving dish and use the back of a spoon to make a shallow swirl.

Garnish: Drizzle 1/2 tbs olive oil over the surface, sprinkle 2 tbs chopped fresh parsley, 1/4 tsp sumac and 1/4 tsp smoked paprika. Top with reserved whole chickpeas if using.
Grilled Ciabatta & Pita + Plating

Grill ciabatta: Place ciabatta slices on the hot grill pan or skillet. Cook 1–2 minutes per side until marked and crisp at the edges. If using an oven, arrange on a baking sheet and bake 6–8 minutes, turning once, until golden.

Season breads: After grilling, sprinkle ciabatta lightly with 1/2 tsp flaky sea salt while still warm.

Assemble platter: On a large serving board or platter, place shallow bowls for Sicilian garlic yogurt, whipped feta and hummus spaced evenly. Spoon final garnishes (paprika, sumac, herbs, olive oil) on each as described above. Arrange ciabatta slices and pita triangles around the dips. Add lemon wedges to the platter for optional brightening.
