Sicilian Garlic Yogurt

Method

Sicilian Garlic Yogurt

    Prepare garlic

    Peel and mince the garlic cloves very finely or press through a garlic press. Sprinkle the minced garlic with the sea salt and let sit for 5 minutes — this helps mellow and break down the raw edge.

    In a medium bowl, combine the Greek yogurt, lemon juice, lemon zest and the minced garlic with its salt. Whisk until smooth and homogenous.

    Slowly whisk in 2 tbs extra-virgin olive oil until incorporated. Taste and adjust seasoning with black pepper, additional salt if needed, and Aleppo pepper or red pepper flakes for a mild heat.

    Stir in chopped parsley. Transfer to a shallow serving bowl, smooth the top, and finish with a light drizzle (about 1 tsp) of olive oil and a pinch of Aleppo/red pepper on top. Cover and refrigerate while you make the other components for flavors to meld (about 10–15 minutes).

Whipped Feta

    Roughly break the feta into chunks. Put the feta, softened cream cheese, and 1/4 cup Greek yogurt into a food processor or high-speed blender.

    Add 1 tbs lemon juice, 1 tbs olive oil, honey, and 1/2 tsp freshly ground black pepper. Pulse and then blend until smooth and whipped, scraping down the sides as needed. If mixture is too thick, add up to 1 tbs water or more lemon juice, 1/2 tbs at a time, to reach a spreadable, fluffy consistency.

    Taste and adjust: add more honey for sweetness, lemon for brightness, or pepper for spice. Transfer to a shallow serving bowl, smooth the top and drizzle with the extra olive oil (about 1 tbs). Sprinkle with cracked pistachios or za'atar and a little chopped parsley for color.

Roasted Red Pepper & Walnut Muhammara

    If your walnuts are not toasted, preheat the oven to 350°F (175°C), spread walnuts on a sheet, and toast 6–8 minutes until fragrant. Let cool slightly.

    Place the drained roasted red peppers, toasted walnuts, breadcrumbs, pomegranate molasses, 1 tbs lemon juice, 2 tbs olive oil, smoked paprika, cumin, cayenne, and 1 tsp salt into a food processor.

    Pulse until ingredients are broken down and mixture is a slightly coarse but spreadable paste. Scrape down the bowl and continue processing to desired texture (some prefer a chunkier muhammara, some smoother). Taste and adjust salt, lemon, or pomegranate molasses for balance.

    Transfer to a serving bowl, smooth the surface and drizzle with a little olive oil. Sprinkle a pinch of smoked paprika on top and garnish with a few chopped walnuts or parsley.

Board Assembly & Serving

    Select three shallow bowls for the dips. Spoon the Sicilian garlic yogurt, whipped feta, and muhammara into separate bowls and place them spaced across your board or platter.

    Arrange pita triangles, toasted flatbread crackers, cucumber slices, halved cherry tomatoes, and mixed olives around the dips in clusters so guests can easily reach each spread.

    Finish each dip: drizzle an extra 1 tsp olive oil over the yogurt and muhammara, add the feta's pistachio/za'atar garnish if not already applied, and scatter chopped parsley over the board. Place lemon wedges on the board for squeezing.

    Serve at room temperature or slightly chilled. Provide spreading knives or spoons for each dip. Encourage guests to 'make it a trio' by sampling combinations of two or all three spreads on a single piece of pita or cracker.

    Leftovers: store each dip in airtight containers refrigerated up to 3–4 days. Bring to room temperature before serving for best flavor and texture.
