1. Inspect bottle

Remove the bottle from storage and inspect the label and closure. Ensure the capsule and cork are intact and there is no leakage or off-odors when you unwrap.

2. Serving temperature

Aim to serve this New Zealand Sauvignon Blanc at 8–10°C (46–50°F) to show its bright aromatics and crisp acidity. If the bottle is already at serving temperature, proceed to opening.

Chilling & Service

Place the bottle in a wine cooler or bucket. Add the ice and cold water in equal parts until the bottle is submerged; add the salt (optional) to speed cooling. Gently rotate the bottle every 2–3 minutes. Expect 8–12 minutes to reach 8–10°C depending on starting temperature.

4. Refrigerator chill (alternative)

If you have time, chill the bottle upright in the refrigerator for about 90–120 minutes to reach the ideal temperature without using ice.

5. Prepare glassware

Use medium-sized white wine glasses. Arrange 5 glasses (standard 150 ml pour) on a clean surface so you can pour immediately after opening.

6. Open the bottle

Wipe the top of the bottle with a clean cloth. Cut or tear the capsule just below the lip, remove the foil, and wipe again. Insert a waiter’s corkscrew straight into the center of the cork and extract smoothly. Wipe the bottle mouth to remove any cork bits.

7. Evaluate the wine

Pour a small 30–60 ml taste into one glass. Swirl gently, smell to confirm brightness and varietal notes (gooseberry, citrus, green herbs), and taste to verify there are no faults.

8. Pour and serve

If the wine is fine, pour approximately 150 ml per glass (about five servings from a 750 ml bottle). Fill glasses to roughly one third to allow room for aromas. Serve immediately at 8–10°C.

9. Garnish (optional)

If desired, add a light lemon twist or a thin cucumber ribbon to the rim of each glass—use sparingly so the garnish complements rather than overpowers the wine.

10. Storage of opened bottle

If there is leftover wine, reseal with the original cork or a wine stopper and refrigerate. Best consumed within 2–3 days for peak freshness; return to chilled temperature before serving again.
