Method
ZERO PROOF — Cocktail
Pull the espresso
Brew a fresh single shot of espresso (about 30 ml). Use high-quality beans, and let the shot rest for 10–20 seconds so it cools just slightly but remains hot enough to emulsify when shaken.
Combine ingredients in shaker
Into a cocktail shaker add Lyre's Dark Cane (30 ml), Lucano Amaro (15 ml), hazelnut syrup (10 ml) and the freshly brewed espresso (30 ml).
Add ice and shake
Add the cubed ice (about 1 cup) to the shaker. Seal and shake vigorously for 12–15 seconds until the outside of the shaker is well chilled and you have a silky crema from the espresso.
Double-strain
Remove your chilled glass from the freezer or dump the ice water. Double-strain the shaken mixture (through a Hawthorne and fine strainer) into the chilled coupe to remove small ice shards and grounds, yielding a smooth base layer.
ZERO PROOF — Finish & Garnish
Garnish and serve
Garnish with 3 whole coffee beans placed gently on the crema, or skewer/place one toasted hazelnut on the rim for a nut-forward presentation. Serve immediately so the nitro texture and crema remain intact.
