    Rehydrate and soften figs

    Place the chopped dried figs, 2 tbs water and 1 tbs light brown sugar in a small saucepan. Bring to a gentle simmer over medium-low heat and cook 3–4 minutes, stirring occasionally, until figs plump and liquid is slightly syrupy. Remove from heat and lightly mash with a fork; set aside.

    Cook the apples

    In a medium frying pan over medium heat, melt 1 tbs unsalted butter. Add the finely diced apple and 2 tbs honey. Cook, stirring, 3–4 minutes until the apple is just softened but still holds some texture.

    Combine figs and apples

    Add the mashed fig mixture to the pan with the apple and stir to combine. Cook 1–2 minutes so flavors meld and excess liquid reduces slightly.

    Melt in brie and season

    Reduce heat to low and add the chopped brie to the pan. Stir gently until the brie softens and creates a cohesive, spreadable mixture (leave a few small chunks if you prefer texture). Stir in 1 tbs fresh lemon juice, 1 tbs chopped thyme leaves, 1/4 tsp sea salt and 1/8 tsp freshly ground black pepper. Taste and adjust seasoning. If using, swirl in 1 tbs balsamic glaze for a sweet-savory lift. Remove from heat and let cool slightly; the spread should be warm and spreadable, not runny.

    Toast the bread

    Preheat the oven to 200°C (400°F). Arrange baguette slices on a baking sheet. Brush both sides lightly with 2 tbs extra-virgin olive oil. Toast in the oven 6–8 minutes, flipping once, until golden and crisp (alternatively, toast in a hot skillet 2–3 minutes per side or under a broiler 1–2 minutes — watch closely).

    Garlic rub

    While the toasts are still warm, rub the cut side of the halved garlic clove over the top of each slice to impart a subtle garlic aroma and flavor.

    Assemble bruschetta

    Spoon about 1–1.5 tablespoons of the warm brie, apple & fig spread onto each toast (adjust to preference). Sprinkle each with a pinch of chopped toasted walnuts for crunch.

    Finish and serve

    If using, drizzle a little honey and/or additional balsamic glaze over the toasts, and top with a few leaves of baby arugula or microgreens and a small thyme sprig for color. Serve immediately while toasts are crisp and the spread is warm.
