    Prepare glass

    Select a large wine glass (or tumbler). If not pre-chilled, fill the glass with a few ice cubes to chill it for 20–30 seconds, then discard those quick-chill cubes and add fresh ice (use the 5 cubes listed).

    Add Aperol

    Pour 60 ml Aperol over the fresh ice in the chilled glass.

    Add Prosecco

    Slowly pour 90 ml chilled prosecco into the glass. Pour gently down the side or onto a bar spoon to preserve carbonation and avoid splashing.

    Top with soda

    Add 30 ml chilled soda water to top the drink and lighten the texture.

    Combine

    Using a long bar spoon or stirrer, gently stir 2 slow rotations to combine Aperol, prosecco, and soda without flattening the bubbles. Taste briefly and adjust by adding another splash of soda if desired (not included in ingredient quantities).

Garnish

    Finish by placing 1 orange wheel on the rim or floating it in the drink as a garnish. Serve immediately while cold and bubbly.
