    Trim and cube

    Trim visible fat and silver skin from the steak. Cut the steak into 1" (2.5 cm) cubes. For this recipe aim for about 48 cubes total (roughly 6 cubes per skewer if making 8 small skewers). Pat cubes dry with paper towels.

    Make marinade

    In a bowl whisk together olive oil, soy sauce, Worcestershire sauce, lemon juice, brown sugar, minced garlic, smoked paprika, salt and black pepper until brown sugar dissolves and mixture is uniform.

    Marinate the steak

    Place steak cubes in a resealable plastic bag or nonreactive bowl. Pour marinade over the meat, press to distribute, and refrigerate for at least 20–30 minutes. For best flavor marinate up to 4 hours. Reserve about 2 tablespoons of the marinade separately (do not reserve marinade that has touched raw meat).

Skewers & Finish

    Soak skewers

    If using wooden skewers, submerge them in water for at least 20–30 minutes before cooking to reduce the chance of burning. Do this while the meat marinates.

    Thread the skewers

    Thread 6 steak cubes onto each skewer, leaving a small gap between cubes so heat can circulate. Arrange skewers on a tray as you finish.

    Preheat grill or pan

    Preheat a grill to medium-high or heat a heavy skillet (cast iron) over medium-high heat. Lightly brush grill grates or pan with the neutral oil to prevent sticking.

    Cook the skewers

    Place skewers on the hot grill or in the hot pan. Cook 2–3 minutes per side, turning to brown all exposed surfaces. Total cook time will be about 6–9 minutes depending on cube size and desired doneness (2 minutes per side for a good medium-rare; longer for medium).

    Rest the meat

    Remove skewers from heat and transfer to a plate. Let rest 4–5 minutes so juices redistribute.

    Optional glaze

    If you reserved marinade, bring it to a boil in a small saucepan and simmer 1–2 minutes to reduce and kill any bacteria. Spoon a little of the boiled reserved marinade over the skewers as a glaze. If you did not reserve marinade, do not use raw marinade on cooked meat.

    Finish and serve

    Sprinkle chopped parsley over the skewers. For the salad add-on: place 2 skewers per full salad portion (or 1 skewer for a half portion). Serve with optional lemon wedges to squeeze over the meat.
