    Soak skewers (if wooden)

    If using wooden skewers, submerge them in cold water for at least 20–30 minutes before using to prevent burning. Skip if using metal skewers.

    Prepare chicken

    Trim any excess fat from the chicken breasts and cut into uniform 2.5 cm (1 inch) cubes so they cook evenly. Place the cubes in a medium mixing bowl.

    Make the marinade

    Mince the garlic. In a small bowl combine 2 tbs olive oil, 2 tbs fresh lemon juice, minced garlic, 1 tbs honey, 1 tsp smoked paprika, 0.5 tsp ground cumin, 1 tsp dried oregano, 1 tsp kosher salt and 0.5 tsp freshly ground black pepper. Whisk until smooth and emulsified.

    Marinate the chicken

    Pour the marinade over the cubed chicken. Toss thoroughly so every piece is coated. Cover and refrigerate for a minimum of 30 minutes; for best flavor, refrigerate 2–4 hours. If short on time, 30 minutes still adds flavor.

Assembly & Finish

    Thread chicken onto skewers

    Remove the marinated chicken from the refrigerator. Thread 8–10 pieces of chicken evenly onto each of the 4 skewers, leaving a little space between pieces so heat circulates and they cook evenly.

    Preheat grill or pan

    Preheat an outdoor grill or indoor grill pan to medium-high (about 200–230°C / 400–450°F). If using oven broiler, position rack 10–15 cm from the heat and preheat the broiler.

    Cook the skewers

    Brush the grill or grill pan lightly with the reserved 1 tbs olive oil. Place skewers on the hot grill and cook about 4–5 minutes per side, turning once, until nicely charred on the outside and the internal temperature reaches 74°C (165°F). If broiling, broil 4–6 minutes per side watching closely to avoid burning.

    Rest and finish

    Transfer cooked skewers to a plate and let rest 3–5 minutes to allow juices to redistribute. Sprinkle chopped parsley over the skewers and squeeze a lemon wedge over each skewer to finish.

    Serve on salad

    Place skewers on top of the salad portion as the add-on. Serve with the additional lemon wedges on the side. If desired, remove chicken from skewers, slice and distribute across salad so each portion gets an even amount.
