Prepare juice
If not already done, freshly squeeze and strain orange juice to remove pulp. Measure 1/2 cup (about 120 ml) of strained juice.
Combine non-sparkling ingredients
In a small mixing glass or cocktail shaker, add 1/2 cup fresh orange juice, 1/2 tablespoon orange liqueur and 1/2 teaspoon simple syrup if using. Add a dash of orange bitters if you like additional complexity. Add a few ice cubes, stir gently for about 10 seconds to chill and slightly dilute.
Assemble cocktail
Discard ice or water from the chilled glass. Pour the chilled orange juice/liqueur mixture into the flute, filling it roughly one-third to one-half full (depending on glass size).
Top with bubbles
Slowly pour 1 cup (about 240 ml) of chilled Prosecco down the side of the glass to preserve effervescence. Pouring slowly will help avoid overflow and maintain a good mix of juice and sparkling wine.
Garnish and serve
Garnish with an orange wheel or a fresh orange twist on the rim. Serve immediately while the drink is cold and bubbly.
