Place the cubed watermelon in a blender. Add the granulated sugar and fresh lime juice to brighten the flavor.

Blend on high until smooth (about 20–30 seconds). Taste and adjust sweetness with up to 1 more teaspoon sugar if needed.

Strain the watermelon purée through a fine mesh sieve into a bowl or measuring cup, pressing with a spoon to extract as much juice as possible. You should end up with about 3/4–1 cup watermelon juice. Chill briefly if not cold.

Build the Spritz

Fill a large wine glass or rocks glass halfway with ice.

Pour 1.5 tablespoons Campari and 1 tablespoon limoncello over the ice.

Add 2 to 3 ounces (about half of the prepared watermelon juice) to the glass. Stir gently to combine the liqueurs and watermelon juice.

Top gently with 4 ounces chilled prosecco. Stir once or twice very gently to marry the bubbles with the juices — avoid vigorous stirring to keep carbonation.

Taste and, if you prefer a fruitier or less bitter drink, add the remaining watermelon juice (up to 1.5–2 oz). Adjust to taste.

Garnish & Serve

Garnish the glass with a small watermelon wedge perched on the rim and a sprig of fresh mint. Optionally slap the mint between your palms first to release aroma.

Serve immediately while prosecco is still lively.
