Place the cubed watermelon in a blender with the sugar, lime juice, and cold water. Blend on high until smooth (about 20–30 seconds).

Strain the blended watermelon through a fine-mesh sieve or chinois into a bowl or measuring cup, pressing on solids with a spoon to extract as much juice as possible. Discard solids. You should have roughly 1 to 1¼ cups of juice; measure out 2 oz per drink when assembling.

Chill the strained juice in the refrigerator until cold, or add a few ice cubes to cool briefly and then remove them before assembling if using immediately.

Cocktail Mix

Fill a large wine glass or collins glass halfway with ice cubes.

Build the drink

Add 1.5 oz Campari and 0.75 oz limoncello directly into the glass over the ice.

Pour in 2 oz of the chilled watermelon juice.

Gently stir 4–6 times with a bar spoon to combine the spirits and juice without flattening the eventual sparkling top.

Sparkle & Garnish

Top the cocktail with about 3 oz chilled prosecco poured gently down the side of the glass to preserve bubbles.

Give the drink one very gentle stir (1–2 rotations) to marry the prosecco with the base without losing effervescence.

Garnish with a fresh mint sprig and a thin watermelon wedge on the rim. Optionally, express a lime peel over the glass for extra aroma.

Serve immediately while sparkling.
