Tater Tots

Preheat and prepare

Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or lightly grease with 1 tablespoon neutral oil so the tots don't stick.

Arrange the frozen tater tots in a single layer on the prepared sheet, leaving a little space between them for even browning.

Sprinkle the tots evenly with 1/2 teaspoon kosher salt.

Bake on the center rack for 20–25 minutes, flipping once halfway through (at about 10–12 minutes). Bake until they are golden brown and crisp on the outside.

If you want extra crispness, broil on HIGH for 1–2 minutes at the end—watch closely so they do not burn.

Parmigiano Reggiano & Chive Finish

While the tots finish in the oven, finely grate the Parmigiano Reggiano and snip the chives; measure the black pepper.

When the tots are out of the oven and still hot on the baking sheet, immediately sprinkle the grated Parmigiano Reggiano evenly over the tots so the cheese melts slightly from the residual heat.

Scatter the chopped chives over the cheesy tots and finish with a light dusting of freshly ground black pepper. Let sit 1–2 minutes to allow cheese to set slightly.

Optional Sides (Bacon or Sausage)

Cook bacon (oven method)

If serving bacon: place 4 strips on a separate foil-lined baking sheet and bake at 400°F (200°C) for 12–16 minutes depending on thickness and desired crispness. Drain on paper towels.

Cook sausage (skillet method)

If serving sausage links: heat 1 teaspoon neutral oil in a skillet over medium heat. Add the 4 sausage links and cook, turning occasionally, 10–12 minutes or until cooked through (internal temp 160°F/71°C for pork). Reduce heat to medium-low if they brown too quickly, and finish cooking covered if needed.

Keep the cooked bacon or sausage warm while finishing the tots: tent loosely with foil or place on a low oven rack.

Serve

Transfer the Parmigiano- and chive-topped tots to a serving platter or individual plates.

Add the cooked bacon strips or sausage links alongside the tots, or serve the meat on the side as preferred.

Include ketchup or spicy mayo in a small ramekin for dipping. Serve immediately so the tots remain crisp.
