Preparation and Baking
Make the Tart Crust
In a large mixing bowl, combine the flour, sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
Preheat the Oven
Preheat your oven to 350°F (175°C).
Blind Bake the Crust
Place parchment paper over the crust and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for an additional 10 minutes, or until lightly golden. Remove from the oven and let cool.
Prepare the Filling
In a mixing bowl, whisk together the eggs and sugar until well combined. Add the lemon juice, zest, thyme, and cream. Mix until smooth.
Fill the Tart
Pour the filling into the cooled tart shell.
Bake the Tart
Bake the tart for 25-30 minutes, or until the filling is set and just slightly jiggly in the center. Let cool before serving.
