    Make sugar syrup (if needed)

    If using granulated demerara or brown sugar, make a quick syrup by combining 2 parts sugar to 1 part hot water. Stir until dissolved and cool slightly. Measure 0.5 oz for the recipe.

    Brew strong coffee. Use a fresh, hot 4 oz pour — espresso-strength brew or a short French press works well.

Build & Combine

    Preheat a heatproof mug or Irish coffee glass by filling it with hot water, then discard the water.

    In the warmed glass, add the dark rum (2 oz), Irish whiskey (0.5 oz), and coffee liqueur (0.5 oz).

    Pour hot brewed coffee (4 oz) into the glass and stir gently to combine the spirits and coffee.

    Add the demerara or brown sugar syrup (0.5 oz) and stir until completely dissolved. Taste and adjust sweetness if desired.

Cream & Finish

    Lightly whip the heavy cream (and optional 0.5 oz milk) by hand or with a fork until slightly thickened but still pourable (soft ribbon stage). The goal is a silky float, not whipped peaks.

    Hold a spoon upside down over the coffee and gently pour the cream over the back of the spoon so the cream floats as a distinct layer on top of the coffee mixture.

    Garnish with a light grating of fresh nutmeg and two coffee beans placed on the cream. Serve immediately.
