Base Cider

Sanitize and Combine
Thoroughly sanitize fermenter, spoons, and any equipment that will contact the cider. In a sanitized primary fermenter, pour 4 L filtered water and 2 L pasteurized apple juice. Stir in 300 g white sugar until fully dissolved. This creates a wort with enough fermentables to reach a dry, low-to-moderate ABV cider.

Measure and adjust acidity. Add 2 tsp acid blend (or equivalent citric/malic acid) to brighten the base. Stir well and check that the solution is homogenous.

Macerate Blueberries
If using fresh, rinse berries and remove stems. If using frozen, thaw. Place 700 g blueberries in a sanitized bowl, sprinkle 100 g sugar and 2 tsp lemon juice over them, and gently mash with a sanitized muddler or spoon. Let macerate for 2–6 hours (or refrigerate overnight) to draw juices and extract color and flavor.

Cook or Sanitize Blueberries (optional)
For a safer, more stable extraction and clearer final cider, you may heat the macerated berries gently: transfer berries plus their juices to a saucepan and bring to a simmer for 5–8 minutes, then cool quickly. Alternatively, pasteurize by holding at 65–70°C (149–158°F) for 10–15 minutes. Allow the blueberry must to cool to room temperature before adding to the fermenter.

Add pectic enzyme (1 tsp) to the blueberry must right after maceration or heating to help break down fruit pectin and improve juice yield and clarity. Let sit 12–24 hours before transferring to the fermenter if possible.

Combine with Base
After maceration and enzyme rest, add the blueberry must (berries plus extracted juice) into the primary fermenter containing the base cider. Stir to incorporate thoroughly; the combined volume should be about 6–7 L depending on juice yield.

Prepare Yeast
Rehydrate 1 tbsp (approx. one standard sachet or equivalent measure) of champagne yeast according to the manufacturer's instructions (typically rehydrate in 30–50 ml of 35–40°C water for 15 minutes). Mix in 1 tsp yeast nutrient when pitching to ensure a healthy fermentation.

Pitch the rehydrated yeast into the fermenter at a temperature between 18–22°C (65–72°F). Ensure the must temperature is in the proper range to avoid thermal shock to the yeast.

Seal the fermenter with an airlock. Ferment at 18–22°C. Primary fermentation should show visible activity within 24–48 hours and generally run strongly for 3–7 days, then slow. Expect primary fermentation to complete in 7–14 days depending on temperature and yeast health.

Rack and Taste
When fermentation has slowed significantly (specific gravity stable for 2–3 days), rack the cider off the gross lees into a sanitized secondary fermenter to help clear and reduce off-flavors from spent yeast and solids. Leave about 1–2 cm headspace to limit oxidation, or use an inert gas if available.

If you want a dry finished cider (typical for hard seltzer style), let fermentation continue until the final gravity is low (target FG ~0.998–1.002, or as measured). If you prefer to stabilize and back-sweeten, add sodium metabisulfite (1 tsp) and potassium or sodium sorbate (1 tsp) after fermentation is complete and sulfite levels have been calculated for your batch size. Wait 24–48 hours after adding sulfite/sorbate before any back-sweetening or bottling to ensure sulfite has taken effect.

Optional: Add 1 tsp blueberry zest or natural blueberry extract at this time for enhanced aroma. Stir gently and allow 24–48 hours for integration.
Carbonation & Packaging

Prepare for Bottling
If bottling naturally: dissolve 80 g priming sugar (corn sugar/dextrose) in 150–200 ml boiling water, cool to room temperature, and add to a sanitized bottling bucket. Rack the cider gently onto the priming solution to mix evenly without aeration. Fill bottles and cap.

For kegging/carbonating with CO2: chill the finished cider and carbonate to 2.5–3.0 volumes CO2 (typical for a hard seltzer / seltzer-like cider). If using forced carbonation and cold crashing, you may dilute with up to 1 L cold filtered water to achieve lighter body and lower alcohol per serving (optional).

Allow bottled cider to condition at 18–22°C for 10–14 days to carbonate, then chill and serve. If kegged, allow time to carbonate under the set CO2 pressure, then chill, settle, and serve.
Serving & Final Notes

Serve chilled (4–8°C). Garnish with a few fresh blueberries or a twist of lemon if desired. The final product should be a dry, crisp blueberry-forward hard seltzer-style cider with bright acidity and a light body.
