    Inspect the mussels, discard any with cracked shells or that do not close when tapped. Rinse well under cold running water to remove grit. Remove beards by pulling toward the hinge. Place mussels in a large bowl with 4 cups cold water and 1 tablespoon kosher salt for 15 minutes to purge sand. Drain and set aside.

    Prepare aromatics

    Heat a large wide pot or deep skillet over medium heat. Add butter and olive oil. When the butter is melted and foaming, add the minced shallots and cook 2–3 minutes until softened and translucent but not browned. Stir in the garlic, ginger, and sliced lemongrass and cook 30–45 seconds until fragrant.

    Build the base

    Stir in the Thai red curry paste and cook 30 seconds to bloom the spices. Add white wine (or seafood stock) and clam juice if using, scraping up any browned bits. Bring to a simmer and reduce for 2 minutes to mellow the alcohol.

    Finish the sauce

    Stir in the coconut milk, fish sauce, light soy sauce, and brown sugar. Add red chili flakes. Simmer gently for 3–4 minutes until the sauce is slightly thickened and well combined. Taste and adjust seasoning: add lime juice, and more fish sauce or sugar if needed to balance salty, sweet, sour. Keep sauce at a gentle simmer.

Cook Mussels

    Increase heat to medium-high. Add the drained mussels to the simmering broth in an even layer. Cover the pot and steam for 4–6 minutes, shaking the pan once halfway, until most mussels have opened. Remove lid and stir gently into the sauce to coat. Discard any mussels that remain tightly closed after cooking.

Finishing & Garnish

    Turn off the heat. Stir in the sesame oil (if using) and freshly ground black pepper. Sprinkle chopped cilantro, Thai basil and sliced scallions over the mussels. Squeeze the juice from lime wedges over the top or serve wedges on the side.

    Serve immediately in the pot or transfer to a warmed serving bowl. Provide toasted baguette slices or steamed jasmine rice to soak up the flavorful sauce.

    Leftovers: cool to room temperature, refrigerate in a covered container up to 24 hours. Reheat gently on the stove; do not overcook mussels.
