Method

Prep potatoes

    Preheat oven and clean potatoes

    Preheat the oven to 425°F (220°C). Scrub the russet potatoes under cold running water with a brush to remove all dirt. Pat them dry thoroughly with a clean towel.

    Prick each potato all over with a fork 6–8 times to allow steam to escape during baking.

    Place the potatoes on a baking sheet lined with parchment or a wire rack set over the sheet for extra airflow.

Season & bake

    Rub each potato with about 1/2 tablespoon olive oil, ensuring the skin is evenly coated. Sprinkle the kosher salt and black pepper evenly over the skins and rub gently so they adhere.

    Bake on the middle rack for 45–60 minutes, depending on size, until skins are crisp and a paring knife or skewer slides into the center with little resistance. For very large potatoes, bake up to 75 minutes.

    Optional: For extra-crispy skin, during the last 5 minutes of baking, switch oven to broil and watch closely until skin is blistered in spots.

Finish & serve

    Remove potatoes from oven using tongs. Let rest 5 minutes to finish steaming inside.

    Open and fluff

    Slice each potato lengthwise about three-quarters of the way through (or crosswise), then press the ends together to fluff the interior with a fork.

    Top each potato with 1 tablespoon (or more to taste) unsalted butter so it melts into the fluffy center. Add a few tablespoons of sour cream, sprinkle 1/4 cup shredded cheddar, some crumbled bacon and 1/2 tablespoon sliced chives per potato as desired.

    Serve immediately while hot.
