Prepare steak

Pat the sirloin cubes very dry with paper towels. Season evenly with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper. Let sit at room temperature for 10 minutes while you prepare other ingredients.

Heat pan

Place a heavy skillet (cast iron preferred) over high heat until very hot, about 3–4 minutes. Add 1 tablespoon vegetable oil and swirl to coat the pan.

Sear sirloin bites

Add the sirloin cubes in a single layer without overcrowding (work in two small batches if necessary). Sear undisturbed for 1.5–2 minutes until a deep brown crust forms, then flip and sear the other side 1–1.5 minutes. If using batches, transfer cooked cubes to a warm plate and repeat.

Finish with butter and aromatics

Reduce heat to medium-low. Add 1 tablespoon unsalted butter, the smashed garlic clove and 2 thyme sprigs to the pan. Tilt the pan slightly and spoon the melted butter and aromatics over the steak bites (basting) for 30–45 seconds to add flavor and finish cooking. Remove garlic and thyme and transfer steak bites to serving plate; tent loosely with foil to keep warm.

Make balsamic reduction

Using the same skillet with any browned bits (deglaze while still warm) or a small saucepan, add 2 tablespoons balsamic vinegar and 1 teaspoon brown sugar. Bring to a gentle simmer over medium heat, scraping up browned bits. Simmer, stirring occasionally, until slightly thickened and syrupy, about 2–4 minutes. Watch closely to avoid burning.

Mount the sauce (optional)

If desired, remove the pan from heat and whisk in 1/2 tablespoon cold unsalted butter to give the drizzle a glossy finish and slightly mellower flavor.

Plate and finish

Arrange the warm sirloin bites on a serving plate. Spoon the balsamic drizzle evenly over the steak. Sprinkle 1 ounce crumbled blue cheese over the bites while still warm so some cheese softens. Garnish with 1 teaspoon finely chopped fresh parsley, if using. Serve immediately.
