Method

Build flavor
Stir in 2 tbs tomato paste and cook 1–2 minutes to remove rawness. Pour in 1 cup porter (or brown ale) and scrape any browned bits from the bottom of the pot. Let the beer reduce by about half, 2–3 minutes.
Add liquids and grains
Add 6 cups vegetable or chicken stock, 1 cup diced tomatoes, 1 cup pearl barley, diced potato, bay leaf, and thyme. Stir to combine. Bring the mixture to a gentle boil, then reduce heat to low and simmer, uncovered, until barley is tender and potatoes are cooked, about 30–35 minutes. Stir occasionally to prevent sticking.
Season and finish
When barley and potatoes are tender, add 1 cup frozen peas and 2 cups chopped fresh spinach. Simmer 3–5 minutes until peas are heated and spinach is wilted. Remove and discard the bay leaf. Stir in 2 tbs chopped parsley, 1 tsp freshly ground black pepper, 1.5 tsp kosher salt (adjust to taste), and 1 tsp lemon juice if using. Taste and adjust seasoning.

Prep produce and proteins
Wash and dry all greens and vegetables thoroughly. Halve cherry tomatoes, slice cucumber, bell peppers, radishes, and red onion. Shred carrots if not pre-shredded. Slice mushrooms, apples, and avocado just before service to prevent browning. Arrange deli turkey, roast beef, and sliced grilled chicken on chilled trays. Quarter hard-boiled eggs.
Prepare reserved vegetables
Steam corn and blanch green beans until bright and tender-crisp; shock in ice water, drain well. Roast beets in advance: wrap whole or diced beets in foil with a drizzle of olive oil, roast at 400°F (200°C) until tender (about 35–50 minutes depending on size), peel and dice. Toast nuts in a dry skillet over medium heat until fragrant, 3–4 minutes, stirring frequently; cool before serving.
Arrange bar
Place large bowls or trays for mixed salad greens and individual bowls/trays for each topping: tomatoes, cucumber, peppers, onions, carrots, beets, mushrooms, corn, green beans, apples, grapes, avocado, hard-boiled eggs, turkey, roast beef, grilled chicken, feta, cheddar, nuts, sunflower seeds, dried cranberries, croutons, and pickled jalapeños. Keep dressings in separate containers with spoons. Label items if offering to guests.
Seasoning & extras
Provide small bowls of salt and pepper and a bottle of olive oil at the bar for quick finishing. Keep dressings refrigerated until just before serving; replenish as needed to keep the bar fresh. Replace cut avocado and apple slices regularly to maintain appearance.
Serving suggestions
Encourage guests to build plates or bowls beginning with a base of mixed greens, add proteins and vegetables, and finish with cheese, nuts, seeds, dried fruit, croutons and dressing. For a heartier option, offer a ladle of the porter vegetable & barley soup alongside the salad.
