Wash all greens, herbs and produce thoroughly in cold water. Spin or pat dry until mostly moisture-free to prevent wilting and dilution of dressings.

Tear larger leaves (romaine) into bite-size pieces. Combine mixed salad greens in a large chilled bowl or hotel pan and keep refrigerated until service.

Arrange iceberg lettuce in a separate shallow pan. Place cherry tomatoes in a shallow bowl and cucumber, shredded carrots, red pepper, mushrooms, red onion, grapes, pineapple, and apple slices each in their own pans or bowls for quick display and replenishment.

Cover pans with plastic wrap or lids and keep on refrigerated rail or under cold wells until serving. Replace produce as needed to maintain freshness.

Prepared & Protein Toppings

Cook and crumble bacon until crisp. Drain on paper towels and transfer to a serving container. Toast sunflower seeds and sliced almonds in a dry skillet over medium heat until fragrant, about 3–4 minutes; cool before placing on the bar.

Arrange crumbled feta, shredded cheddar, quartered hard-boiled eggs, sliced smoked turkey, black beans, chickpeas, bacon bits and toasted seeds/nuts in separate bowls or hotel pans. Keep cold on refrigerated rail or over ice. Replenish frequently to ensure safe temperatures.

Prepared Salads & Condiments

Prepare or procure house potato salad, creamy coleslaw, and Mediterranean pasta salad. Portion into shallow pans or bowls in visually appealing portions and chill until ready to serve.

Place marinated olives and pickled vegetables in small bowls with serving spoons. Keep croutons in airtight containers near the salad station to maintain crunch.

Warm dinner rolls in a 350°F (175°C) oven for 5–8 minutes until heated through. Brush with melted butter immediately after warming and place in a covered basket or pan to stay warm for service. Provide butter in a small dish nearby.

Dressings & Sauces

Place dressings (ranch, balsamic vinaigrette, honey mustard) in squeeze bottles or pour bowls with ladles. Keep chilled on a bed of ice or refrigerated rail. Label each dressing clearly.

Pour olive oil and red wine vinegar into small cruets for guests who prefer to dress their salads simply. Provide lemon wedges in a small bowl with tongs.

Place salt and freshly ground black pepper grinders or shakers at the bar for final seasoning.

House-Made Soups (two varieties)

Tomato Basil Soup — Finish & Hold

Prepare tomato basil soup base ahead (roasted tomatoes, onion, garlic, chicken or vegetable stock, cream optional, fresh basil). Reheat gently to a serving temperature of 160–175°F (71–79°C) in a soup kettle. Stir occasionally to prevent scorching and keep covered. Ladle into bowls and place near the salad bar with a ladle and garnish of fresh basil chiffonade if desired.

Chicken Vegetable Soup — Finish & Hold

Prepare chicken vegetable soup base ahead (sautéed aromatic vegetables, diced cooked chicken, stock, herbs). Reheat to 160–175°F (71–79°C) in a separate soup kettle. Keep covered and stir occasionally. Provide ladle and garnish (chopped parsley) at the station.

Maintain soups on low heat and monitor temperature every 30 minutes to ensure food safety. Replenish from hot-holding pans as needed.

Setup & Service

Set up the Animas station with chilled pans for produce and toppings, heated kettles for soups, and warmers for rolls. Label each item clearly and provide utensils: tongs for greens and large items, spoons for salads, ladles for soups, and small spoons for dressings and toppings.

Arrange items in a logical flow from greens → vegetables/fruit → proteins/toppings → prepared salads → dressings → rolls and soups to facilitate guest movement. Keep sneeze guards in place and replenish items frequently to keep the presentation abundant.

Maintain proper temperatures: cold items at 40°F (4°C) or below, hot items at 140°F (60°C) or above. Monitor and rotate stock to ensure freshness during service.
