Prep the chicken
If breasts are very thick, butterfly or pound to an even thickness of about 1/2 inch. Pat dry with paper towels. Make 3 shallow cuts in any thick portions so they cook evenly.
Marinate
In a shallow dish, whisk together buttermilk, egg, and hot sauce (if using). Submerge chicken in the buttermilk mixture, cover, and refrigerate for at least 1 hour or up to overnight. This tenderizes and flavors the meat.
Make the dredge
In a wide plate or bowl combine 1 1/2 cups flour, cornstarch, 2 tsp kosher salt, 1 tsp black pepper, paprika, garlic powder, onion powder, and cayenne (if using). Mix thoroughly so spices are evenly distributed.
Dredge and rest
Remove a piece of chicken from the marinade, allowing excess to drip off, then press both sides into the flour mixture, coating completely. For an extra-crispy crust double-dredge: dip back briefly into the buttermilk mix and coat again in the flour mixture. Place dredged chicken on a wire rack and let rest 10–15 minutes to help the coating adhere.
Fry the chicken
Carefully place chicken pieces in hot oil, skin-side down first if skin-on. Do not overcrowd the pan — fry in batches. Maintain oil temperature between 325–350°F (160–175°C). Fry for about 4–6 minutes per side (thinner pieces will be quick) until golden brown and internal temperature reaches 165°F (74°C). Adjust heat as needed to avoid burning the crust.
Drain
Transfer cooked chicken to a wire rack set over a baking sheet or to paper towels to drain. Keep warm in a 200°F (95°C) oven while you make the gravy and finish sides.
House Gravy
Reserve fat
After frying the last batch, carefully pour off excess oil leaving about 3 tablespoons of flavorful fat and any browned bits in the pan. If you don't have pan drippings, melt 3 tablespoons unsalted butter in a skillet.
Make roux
Return pan to medium heat. Sprinkle in 3 tablespoons flour and whisk constantly for 1–2 minutes until the raw flour taste is gone and the mixture turns golden (this is your roux). Do not let it burn.
Add stock and finish
Slowly whisk in 2 cups chicken stock, scraping up browned bits from the bottom of the pan. Bring to a gentle simmer and let thicken, whisking frequently, about 3–5 minutes. If you prefer a creamier gravy, whisk in 1/4 cup heavy cream. Season with 1 tsp salt and 1/2 tsp pepper, taste and adjust. Stir in chopped thyme or parsley if using.
Strain (optional)
For a smooth gravy, strain through a fine-mesh sieve into a clean saucepan. Keep warm over low heat until serving.
Sides & Finish
Prepare sides
While chicken marinates or fries, prepare your chosen sides: reheat mashed potatoes until hot; steam green beans until tender-crisp; warm cornbread; toss coleslaw with dressing. Timing: mashed potatoes and cornbread can be kept warm in a low oven; green beans should be finished last to stay bright and crisp.
Assemble the plate
Place two scoops of mashed potatoes on the plate (or your chosen side combination). Set the fried chicken breast alongside. Spoon 1/3 to 1/2 cup house gravy over the chicken and a little onto the potatoes. Garnish with chopped parsley and serve lemon wedges on the side for a bright squeeze if desired.
Serve
Serve hot. Recommend offering extra gravy at the table. Leftovers: refrigerate chicken and gravy separately in airtight containers up to 3–4 days.
