Choose up to three fillings from the Filling Options. If using mushrooms, bell pepper, or potatoes that aren’t pre-cooked, pre-sauté them until tender and set aside. Grate cheese and have garnishes ready.

If making golden hash browns fresh: wash, peel (optional) and shred 1 medium russet potato; rinse under cold water until water runs clear, squeeze out excess moisture using a clean kitchen towel. If using country potatoes, par-cook diced potatoes until tender then dice to 1/2-inch pieces.

Hash Browns (if chosen)

Heat a 10–12 inch nonstick or cast-iron skillet over medium-high heat and add 1 tablespoon neutral oil and 1/2 tablespoon butter. When hot and shimmering, spread shredded potatoes in an even layer (about 1 cup per serving). Press down with a spatula, reduce heat to medium, and cook without stirring 4–6 minutes until deep golden brown on bottom. Flip in sections, add a little more oil/butter if needed, and cook another 3–5 minutes until golden and cooked through. Season with 1/4 tsp salt and 1/8 tsp pepper. Keep warm on low heat or in a 200°F (95°C) oven.

Cook Side — Country Potatoes

Country Potatoes (if chosen)

Heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Add 1 cup diced, par-cooked potatoes and spread in an even layer. Cook, stirring occasionally, 8–10 minutes until crisp and browned. In the last 2 minutes add 2 tablespoons finely diced onion (optional) and 1/4 teaspoon smoked paprika. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Keep warm.

Cook Fillings (if raw)

For fillings that need cooking (mushrooms, peppers, spinach, onions, diced ham/fresh bacon): heat 1 teaspoon oil in a small skillet over medium heat. Add mushrooms or peppers and sauté 3–5 minutes until softened; add spinach last and wilt, about 30–60 seconds. Remove to a plate and wipe skillet clean.

Make the Omelette

In a bowl whisk together 3 large eggs, 2 tablespoons milk, 1/2 teaspoon of the salt, and 1/8 teaspoon pepper until uniform and slightly frothy. This yields a tender omelette for one serving.

Heat a 9–10 inch nonstick skillet over medium heat. Add 1 tablespoon butter and 1/2 teaspoon neutral oil. When butter is foaming but not browned, tilt pan so butter coats the bottom.

Pour the egg mixture into the skillet. Let the eggs set undisturbed for about 20–30 seconds until the edges begin to lift. Using a spatula, gently pull the cooked edges toward the center while tilting the pan so uncooked egg flows to the edges. Repeat around the pan for about 45–60 seconds until the top is still slightly runny but mostly set.

Scatter the pre-cooked fillings and cheeses evenly over one half of the omelette (about 1/4 cup cheese and chosen fillings totaling about 1/2 cup). If using raw fillings that are quick-cooking (e.g., thin-sliced tomatoes), add them now.

Using the spatula, carefully fold the empty half of the omelette over the filled half. Let cook 30–60 seconds more to melt cheese and finish cooking (for a slightly runny interior) or 1–2 minutes for fully set.

Slide the omelette onto a warm plate, garnish with 1 teaspoon chopped parsley and a grind of black pepper. Serve immediately with the chosen side and hot sauce or salsa on the side.

Notes and Serving

If preparing multiple omelettes, keep finished omelettes warm on a sheet tray in a 200°F (95°C) oven for up to 15 minutes. Cook sides fresh to keep crispness.

Adjust salt and pepper to taste. For a fluffier omelette, separate eggs and whip whites to soft peaks, fold in yolks, then proceed — increase estimated cook time by 1–2 minutes.
