Prepare protein
Choose one protein: bacon, sausage patties, or country ham. For bacon: place 3 slices in a cold skillet, turn heat to medium, and cook 8–10 minutes, turning occasionally, until crisp to desired doneness. Transfer to paper towel-lined plate. For sausage patties: cook over medium heat 4–6 minutes per side until browned and cooked through. For country ham: heat a skillet over medium and cook ham slices 1–2 minutes per side until warmed and slightly caramelized. Keep warm.
Warm croissants
Preheat oven to 350°F (175°C). Split the croissants horizontally with a serrated knife. Place cut sides up on a baking sheet and brush lightly with melted butter (about 1 tbs total). Warm in the oven 4–6 minutes until heated through and slightly crisp on the cut surface. Remove and set aside.
Make scrambled eggs
In a small bowl, whisk together 2 large eggs, 1 tablespoon whole milk, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until combined but not frothy. Melt 1 tablespoon unsalted butter in a nonstick skillet over medium-low heat. Pour in egg mixture. Let sit 10–15 seconds to set at the edges, then gently stir with a rubber spatula, pushing set eggs from the edges toward the center. Continue stirring and folding until eggs are softly set but still slightly glossy, about 1–2 minutes. Remove from heat just before fully firming; residual heat will finish them.
Assemble and melt cheese
Place warmed bottom half of each croissant on the baking sheet. Divide scrambled eggs evenly between the two croissants. Top eggs with chosen protein (break bacon into pieces if necessary), then place 1 ounce (or a small handful if shredded) of cheddar cheese on top of the protein. Place croissant tops over the cheese. Return assembled sandwiches to the oven for 1–2 minutes, or place under a broiler for 15–30 seconds, just until cheese melts and sandwich is warm. Watch closely to avoid burning.
Finish and serve
Remove sandwiches from oven. Cut each sandwich in half if desired. Serve immediately with the fruit on the side.
