Soften & Mix

Remove cream cheese from refrigerator about 20–30 minutes before starting so it softens. In a medium bowl, combine softened cream cheese, grated sharp cheddar, garlic powder, onion powder, chopped cilantro or chives (if using), kosher salt, and black pepper. Beat with a fork or small hand mixer until smooth and fully incorporated, scraping down the bowl once or twice.

Taste & Adjust

Taste a small pinch of the filling and adjust seasoning as needed (add a pinch more salt, pepper, or garlic powder). Refrigerate briefly if mixture becomes too soft to handle.

Prepare Peppers

Preheat oven to 400°F (200°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top if available (rack allows bacon to crisp on all sides).

Wash jalapenos and dry thoroughly. Using a sharp paring knife, slice each jalapeno in half lengthwise. Wearing gloves is recommended to avoid skin/eye irritation from capsaicin.

With a small spoon or melon baller, scoop out seeds and membranes to create a cavity for the filling. For milder poppers remove most membranes; for medium heat leave a little. Pat pepper halves dry with paper towels.

Assemble

Spoon or pipe the cream cheese mixture into each jalapeno half, filling to the edge but not overflowing. Press filling gently to remove air pockets.

Take one bacon slice cut in half (you should have 24 halves for 24 pepper halves). Wrap a bacon half around each filled jalapeno half so it overlaps slightly on the underside. Secure the bacon with a toothpick inserted through the bacon and pepper flesh. Place assembled poppers seam-side down on the prepared rack or directly on the foil if not using a rack.

If using brown sugar for a candied finish, sprinkle about 1/4 tsp brown sugar over each wrapped popper or brush each with a light dusting. For a smoky touch, lightly sprinkle smoked paprika over the tops.

Bake & Finish

Place the baking sheet on the middle rack and bake at 400°F (200°C) for 20–25 minutes. After 15 minutes, check bacon color. Continue baking until bacon is crisped to your liking and filling is hot and slightly bubbling. Total bake time will vary with bacon thickness; thin bacon will crisp faster, thick-cut may need up to 28–30 minutes.

For extra crispness, switch oven to broil on high for 1–2 minutes at the end—watch closely to prevent burning.

Remove from oven and let poppers rest on the baking sheet for 3–5 minutes so filling sets slightly. Carefully remove toothpicks before serving or leave them in for easy handling if serving buffet-style.

Serve

Arrange on a platter and serve warm. Optional accompaniments: ranch dressing, blue cheese dip, or a squeeze of lime. Store any leftovers in an airtight container in the refrigerator for up to 3 days; reheat in a 375°F (190°C) oven for 8–10 minutes to re-crisp bacon.
