Mixing the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, paprika, salt, and pepper. Whisk together until well combined.

Adding the Beer
Gradually pour in the beer while whisking until the batter is smooth and free of lumps. Set aside.
Frying the Fries

Heating the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Drying the Fries
Drain the soaked fries and pat them dry with a clean kitchen towel to remove excess moisture.

Coating and Frying
Dip the dried fries into the beer batter, allowing any excess to drip off. Carefully place the battered fries into the hot oil, cooking in batches to avoid overcrowding. Fry until golden brown and crispy, about 4-5 minutes.

Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Season with salt and pepper immediately.
