Strawberry-Black Pepper Shrub (prepare ahead, 24 hours preferred)

Macerate strawberries

Combine the quartered strawberries and granulated sugar in a bowl. Stir to coat, then cover and let sit at room temperature for 1–2 hours until the strawberries release their juices and become syrupy.

Add pepper and simmer (optional)

Lightly crush the black peppercorns with a mortar & pestle or the back of a spoon. Place macerated strawberries with their juices, crushed peppercorns, and water in a small saucepan. Gently heat over low heat for 3–5 minutes, stirring, just to dissolve sugar completely and bloom the pepper flavor. Do not boil — you want to warm, not cook out the fresh character.

Finish with vinegar

Remove from heat and let cool for 10 minutes. Stir in the apple cider vinegar and lime zest (if using). Taste and adjust: add more vinegar if you want brighter acidity, or a pinch more sugar if it’s too tart.

Strain and rest

Pour the mixture through a fine-mesh sieve or cheesecloth set over a bowl, pressing gently to extract syrup but leaving most solids behind. Transfer the strained shrub to a clean jar, seal, and refrigerate at least 12–24 hours (best after 24) so flavors meld. The shrub will keep refrigerated for 2–3 weeks.

Cocktail Assembly (per drink)

Prepare the glass: On a small plate, spread the charcoal salt in a shallow rim. Moisten the rim of a rocks glass or coupe with a lime wedge and dip into the charcoal salt to coat the edge. Add fresh ice to the glass if using a rocks glass.

Build the cocktail: In a cocktail shaker, add ice, 2 oz mezcal, 1 oz strawberry-black pepper shrub, and 0.75 oz fresh lime juice.

Shake and strain: Seal the shaker and shake vigorously for 10–12 seconds until well chilled. Double-strain into the prepared glass over fresh ice (or serve neat in a coupe if preferred).

Garnish and serve: Garnish with a halved fresh strawberry perched on the rim or a lime wheel. Serve immediately.
