Seasonal Fruit Puree/Syrup

Cook fruit

Combine the seasonal fruit, granulated sugar, and water in a small saucepan over medium heat. Bring to a gentle simmer and cook, stirring occasionally, until the fruit breaks down and the sugar dissolves (6–8 minutes).

Blend & strain

Remove from heat. Let cool slightly, then transfer to a blender and puree until smooth. For a smoother syrup, strain the puree through a fine-mesh sieve into a bowl, pressing to extract as much liquid as possible. Stir in 1 teaspoon fresh lemon juice. Cool completely before using (refrigerate if needed).

Storage: keep in an airtight container in the refrigerator up to 7 days.

Prepare glass & tools

Chill a coupe or rocks glass by filling with ice water while you prepare the cocktail. Have a cocktail shaker, fine strainer, and jigger ready.

Combine ingredients

Add 2 oz gin, 1 oz fresh citrus juice (use a 50/50 mix of lemon and orange for brightness), 0.75 oz seasonal fruit puree/syrup, 0.5 oz honey simple syrup, 0.25 oz orange liqueur, 0.25 tsp freshly grated ginger (optional), and 2 dashes bitters into the cocktail shaker.

Shake

Fill the shaker with ice (about 1 cup). Shake vigorously for 12–18 seconds until the outside of the shaker is cold and the mixture is well-chilled and slightly diluted.

Strain & top

Dump the ice water from your chilled glass. Double-strain the cocktail into the glass using both the shaker strainer and a fine strainer to remove pulp and ice shards. Top gently with 1 oz club soda to add a light effervescence, if desired.

Garnish & Finish

Express the oils of a citrus twist over the drink if using, then rim the glass with it and drop it in (or garnish with a slice of seasonal fruit).

Lightly slap the herb sprig between your palms to release aromatics and place it in the glass as garnish. If using rosemary, you can briefly torch the tip for a smoky aroma (optional).

Serve immediately. Provide a cocktail stirrer so the drinker can adjust dilution/sweetness by stirring.
