Make the blackberry syrup base

Combine the fresh blackberries, granulated sugar and 1/4 cup water in a small saucepan over medium heat.

Bring the mixture to a gentle simmer, stirring and pressing the berries with a wooden spoon to release juices. Simmer for 5 minutes until the sugar dissolves and the berries break down.

Remove from heat and let the mixture cool for 5 minutes, then strain through a fine-mesh sieve into a bowl, pressing on solids to extract as much liquid as possible. Discard solids or reserve for another use.

Finish as a shrub

While the warm syrup is still slightly warm, whisk in the fresh lime juice, fresh orange juice, apple cider vinegar and sea salt until fully combined. Taste and adjust: the result should be bright, tart and slightly vinegary — balanced between sweet, sour and salty.

Transfer the shrub to a clean jar. Cool to room temperature, then refrigerate for at least 30 minutes (or up to 1 week). Chill thoroughly before using in cocktails.

Main Cocktail

Prepare glass: choose a highball or Collins glass and fill it 3/4 with ice (about 1 cup).

Add 2 tablespoons of the chilled blackberry-citrus shrub into the glass.

Add the fresh orange slice into the glass and gently muddle once or twice against the ice and shrub to release some oils — avoid over-muddling to keep the drink light.

Pour in 1/2 tablespoon fresh lime juice for brightness.

Add 6 oz non-alcoholic ginger beer and 2 oz cold sparkling water. Stir gently with a bar spoon 6–8 times to combine the shrub with the bubbles without flattening the carbonation.

Taste and adjust: if you prefer sweeter, add 1/2–1 tsp simple syrup or a bit more shrub; for more tang, add a few drops of lime juice.

Garnish with 2 mint sprigs (slap one between your palms to bloom the aroma), three blackberries on a pick, and a lime wheel on the rim.

Serve immediately with a straw and a small stirrer. Encourage guests to stir lightly before sipping to reincorporate settled shrub.
