Matcha Base
Sift and whisk matcha
Sift 2 tsp matcha powder into a small bowl or matcha bowl to remove clumps. Pour 60 ml hot water (about 80°C / 175°F) over the powder. Using a bamboo whisk (chasen) or small frothing whisk, whisk vigorously in an M-shaped motion until the matcha is fully dissolved and a thin layer of fine foam forms on the surface, about 20–30 seconds.
Sweeten
Stir in 20 ml simple syrup (or honey syrup) into the warm matcha until evenly incorporated. Taste and adjust sweetness to preference (add up to 10 ml more syrup for a sweeter spritz). Allow the matcha mixture to cool slightly (2–3 minutes).
Assemble Drink
Fill a tall glass with 1 cup cubed ice.
Add 30 ml fresh lemon juice to the glass over the ice.
Pour the cooled sweetened matcha over the ice and lemon juice. Pour gently so the layers remain slightly distinct.
Top with 120 ml sparkling water or club soda. Stir once gently with a bar spoon to combine flavors while preserving some effervescence.
Garnish & Serve
Garnish with a lemon wheel or twist on the rim and a mint sprig if using. Serve immediately with a straw or stirring spoon.
Optional: For a visually layered effect, pour matcha over the back of a spoon onto the ice before adding sparkling water.
