Combine ingredients
Add the gin, blanc vermouth, dry sherry, house olive leaf & lemon cordial, and fresh lemon juice into a mixing glass or cocktail shaker.
Add ice and stir
Fill the mixing glass with plenty of ice (enough to come near the rim). Stir gently but thoroughly for 20–30 seconds (about 20–30 rotations) until the mixture is well chilled and slightly diluted.
Prep glass
If you used ice water to chill the serving glass, discard the ice water and quickly wipe the inside with a folded paper towel so it remains very cold but dry.
Strain
Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a Hawthorne and fine mesh strainer (or a single fine strainer) to remove any small ice chips or pulp.
Serve
Present immediately while cold. Note: adjust the cordial to taste if you prefer sweeter or more savory notes; the olive leaf & lemon cordial should provide a subtle briny-citrus balance with the vermouth and sherry.
