    Trim wing tips if desired and pat wings dry with paper towels. Submerge 3 lb chicken wings in the brine, cover, and refrigerate for 1 to 2 hours (up to 4 hours for more seasoning). Do not over-brine to avoid overly salty wings.

Seasoning and Preparing the Smoker

    Preheat your smoker to a stable 225°F (107°C). Use a mild fruitwood (apple or cherry) or hickory for a stronger smoke. Ensure the smoker has indirect heat and a water pan if available to maintain humidity.

Smoking the Wings

Finishing Sauce (optional)

    In a small saucepan over low heat, melt 2 tbsp unsalted butter. Stir in 2 tbsp honey, 1 tbsp apple cider vinegar and 1 tbsp hot sauce until smooth and slightly thickened, about 1–2 minutes. Remove from heat and stir in 1 tbsp chopped parsley if using.
