Prepare Chicken

Trim & Pat Dry
Trim any excess skin or fat from the chicken pieces and pat them thoroughly dry with paper towels. Dry surface helps the rub adhere and promotes better smoke ring and bark.

Brine-ish Salt & Sugar
Lightly sprinkle the kosher salt and granulated sugar evenly over all sides of the chicken. Rub them in gently. This dry-salting step (1–4 hours, or overnight in fridge if time allows) seasons the meat and helps retain moisture. If refrigerating, place chicken uncovered on a rack to dry the skin for a crisper finish; remove from fridge 30–45 minutes before smoking to come toward room temperature.

Combine smoked paprika, black pepper, garlic powder, onion powder, brown sugar, dried thyme, and cayenne pepper in a small bowl and mix until uniform.

In a larger bowl, whisk the olive oil and apple cider vinegar together, then add the dry rub and stir into a paste. Rub the paste all over each chicken piece, ensuring an even coating under the skin where possible and around joints. Let rest 20–30 minutes for flavors to meld if time allows.

Soak wood chips for 30 minutes if using chips; drain before use. Add wood chips or chunks to the smoker's firebox or smoking tray per manufacturer instructions.
Smoking the Chicken

Place the chicken pieces skin-side up on the smoker grate with space between pieces for smoke circulation. Insert a probe thermometer into the thickest part of the largest piece without touching bone (if available).

Smoke at 225–250°F (107–121°C) until the internal temperature reaches 165°F (74°C) in the thickest part of the meat. Expect approximately 1.5 to 3 hours depending on piece size and smoker consistency. Check every 30 minutes for color and to add wood/chips as needed.

Optional: If you want crispier skin near the end, increase smoker temperature to 300–325°F (149–163°C) or transfer chicken to a 425°F (218°C) oven for 8–12 minutes to render fat and brown skin. Alternatively, brush melted butter over the skin and sear on a hot grill or cast-iron skillet for 1–2 minutes per side.
