Waffle batter
1. Preheat
Preheat your waffle iron according to the manufacturer's instructions. If it has temperature settings, set to medium-high (about 375–400°F / 190–205°C surface temperature).
2. In a large bowl, whisk together the dry ingredients: 2 cups all-purpose flour, 2 tablespoons granulated sugar, 1 tablespoon baking powder, and 1 teaspoon fine salt until evenly combined.
3. In a separate medium bowl, whisk the wet ingredients: 2 large eggs until lightly beaten, then add 1 3/4 cups whole milk, 1/2 cup melted unsalted butter (cooled slightly), and 1 teaspoon pure vanilla extract. Whisk until blended.
4. Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a spatula just until combined. Small lumps are fine—do not overmix or the waffles will be tough.
5. Let the batter rest for 5 minutes while the waffle iron finishes preheating. The rest allows the baking powder to start activating and gives lighter waffles.
Cooking & finishing waffles
6. Lightly brush or spray the preheated waffle iron with neutral oil/nonstick spray (about 1/2 to 1 teaspoon per batch as needed).
7. Pour the appropriate amount of batter into the center of the iron (varies by waffle iron size — generally 1/2 to 3/4 cup for a standard Belgian waffle). Close the lid and cook until steam largely subsides and the waffle is golden brown and crisp, about 3–6 minutes depending on your appliance. Avoid opening early to check.
8. Carefully remove the waffle with a fork or tongs and transfer to a wire rack set on a baking sheet to keep crisp while you finish remaining waffles. If keeping waffles warm, place the rack in a 200°F (95°C) oven.
9. Repeat oiling the iron lightly between batches and cook remaining batter the same way.
Toppings & serving
10. If using fresh whipped cream: whip heavy cream to soft peaks and lightly sweeten if desired. If using store-bought, shake or dispense per package directions. Spoon or pipe approximately 2 tablespoons whipped cream onto each waffle (adjust to preference). The recipe's ingredient amount (1 cup) yields topping for ~4 waffles.
11. Warm the maple syrup briefly if preferred (microwave 10–15 seconds or warm in a small saucepan) and serve about 3 tablespoons (roughly 45 ml) per waffle, more to taste. The recipe includes 3/4 cup total syrup—enough for about 4 waffles.
12. Top with a small pat of softened butter if desired and scatter fresh berries. Dust with powdered sugar if you like a touch of extra sweetness.
