Hot Honey Fried Chicken (small pieces to top eggs)

    Hard boil eggs

    Place 12 large eggs in a single layer in a saucepan and cover with cold water by about 1 inch (2.5 cm). Bring to a rolling boil over medium-high heat. Once boiling, cover the pan, remove from heat, and let sit for 10–12 minutes. After time is up, transfer eggs to an ice bath for at least 10 minutes to stop cooking and make peeling easier.

    Peel the eggs gently. Slice each egg lengthwise with a sharp knife and remove the yolks into a medium mixing bowl; place whites on a serving platter and keep chilled.

    Mash the yolks with a fork until mostly smooth. Add 6 tbs mayonnaise, 2 tsp Dijon mustard, 1 tsp white wine vinegar, 1 tbsp hot honey, 1 tsp smoked paprika, 1 tsp salt, and 1 tsp freshly ground black pepper. Mix until very smooth. Taste and adjust seasoning — add a little more hot honey for sweetness or more mustard for tang if desired.

    Transfer yolk mixture to a piping bag fitted with a large round or star tip (or use a zip-top bag with the corner snipped). Pipe or spoon the filling back into the egg white halves, dividing evenly among the 24 halves.

    Lightly dust the filled eggs with additional smoked paprika if using and sprinkle with half of the sliced chives. Keep chilled while you prepare the chicken or serve immediately at cool temperature.

Hot Honey Fried Chicken

    Slice the trimmed chicken into small bite-sized strips or lollipop-sized pieces, about 2–3 cm wide, so each deviled egg can get a small piece on top. Pat pieces dry with paper towels.

    In a shallow bowl, combine 120 ml buttermilk and 1 tsp hot sauce. Add the chicken pieces, toss to coat, and refrigerate to marinate for 15–30 minutes (short marinate is sufficient because pieces are small).

    While chicken marinates, combine 80 g all-purpose flour, 20 g cornstarch, 1 tsp baking powder, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, and 1/2 tsp smoked paprika in a shallow dish and whisk to combine.

    Heat a wide, heavy skillet or Dutch oven with about 3–4 cm of neutral oil over medium-high heat until it reaches 175°C (350°F). If you don't have a thermometer, test with a small pinch of batter — it should sizzle steadily and brown in about 45–60 seconds.

    Remove chicken from buttermilk, letting excess drip off, then dredge thoroughly in the flour mixture, pressing to adhere. Shake off excess flour and set pieces on a wire rack while oil heats.

    Fry chicken in batches without crowding, turning as needed, until golden brown and cooked through, about 3–4 minutes per batch for small pieces (internal temperature should reach 74°C / 165°F). Transfer fried pieces to a rack lined with paper towels to drain briefly.

    While still hot, toss the fried chicken pieces with 2 tbs extra hot honey in a bowl so they get a light glossy coating. The amount of honey can be adjusted to taste — you want a thin glaze, not syrupy.

    Reserve a few small pieces for tasting during assembly and keep the remainder warm (or at room temperature) until assembling deviled eggs. If you need to make ahead, re-crisp in a 190°C (375°F) oven for 4–5 minutes before glazing.

Assembly & Garnish

    Top each filled deviled egg with one glazed hot honey chicken piece (or small shred if pieces are larger). Aim for 1 small piece per egg half so every guest gets a bit of chicken on each bite.

    Sprinkle remaining sliced chives and microgreens over the platter. Finish with an extra light drizzle of hot honey over the eggs if desired and a final dusting of smoked paprika.

    Serve immediately so the contrast between cool creamy egg and warm honey-glazed chicken is preserved. If making ahead, keep egg halves chilled and chicken warm separately; assemble within 30 minutes of serving.
