    Form the patties

    Divide the ground beef into 4 equal portions (about 4 oz / 113 g each). Gently form each portion into a patty about 3/4" thick, making a slight indentation in the center of each patty with your thumb to prevent doming. Season both sides of each patty with 1/4 tsp salt and 1/4 tsp black pepper.

    Toast the buns

    Heat a skillet or griddle over medium heat. Spread about 1/2 tbs softened butter on the cut side of each bun. Place buns buttered-side down on the skillet and toast until golden, about 1–2 minutes. Remove and keep warm.

    Cook the patties

    Add 1 tbs vegetable oil to the same skillet and increase heat to medium-high. When oil is shimmering, add the patties leaving space between them. Cook without moving for 3–4 minutes until a brown crust forms. Flip and cook for another 2 minutes for medium, then immediately place one slice of American cheese on each patty and cover the skillet with a lid for 30–45 seconds to melt the cheese. If you prefer more well-done, cook 1–2 minutes longer.

    Assemble

    Spread 1 tsp mayonnaise on the bottom half of each toasted bun, 1 tsp ketchup and 1 tsp mustard on the top half. Place lettuce leaf on bottom bun, then the cheeseburger patty, 1–2 tomato slices, 2–3 red onion rings, and 2 pickle slices. Close with top bun and serve immediately.

    Prepare the potatoes

    Peel (optional) and cut each russet potato into 1/4"–1/2" thick sticks. Rinse the cut fries under cold water until the water runs clear to remove excess starch. Pat thoroughly dry with clean kitchen towels or paper towels.

    Fry the potatoes

    In a deep, heavy pot or a deep fryer, heat 4 cups vegetable oil to 325°F (160°C). Working in batches to avoid crowding, add fries and blanch for 3–4 minutes until they are just tender but not browned. Remove with a slotted spoon and drain on paper towels. Increase oil temperature to 375°F (190°C). Return blanched fries in batches and fry for 2–3 minutes until golden and crisp. Remove and drain on paper towels.

    Season

    While still hot, toss fries with 1 tsp salt and 1/2 tsp black pepper. Serve immediately alongside the cheeseburgers.

Drink

    Fill four glasses with ice cubes (about 1/4 cup each). Pour 1 cup of cola into each glass. Serve chilled with the cheeseburgers and fries.
