Prepare the Vegetables

Chop the cherry tomatoes, bell peppers, onion, and mushrooms into small pieces.

Whisk the Eggs

In a bowl, whisk together the eggs (or egg whites), salt, and black pepper until well combined.

Cook the Vegetables

In a non-stick skillet, heat a little oil over medium heat. Add the chopped vegetables and sauté until they are tender, about 5-7 minutes.

Add the Eggs

Pour the egg mixture over the sautéed vegetables in the skillet. Let it cook for a few minutes until the edges begin to set.

Add Cheese

Sprinkle the cheddar cheese over the top of the omelet. Cover the skillet and let it cook for an additional 3-4 minutes, or until the cheese is melted and the eggs are fully set.

Serve

Gently fold the omelet in half and slide it onto a plate. Serve with potato wedges on the side.
