Prepare the Filling
In a large bowl, combine the chopped cabbage, grated carrot, green onion, chopped mushrooms, minced garlic, grated ginger, soy sauce, sesame oil, and salt. Mix well until all ingredients are combined.
Assemble the Gyoza
Take a gyoza wrapper and place about a teaspoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half, and press to seal. Create pleats on the edge if desired.
Cook the Gyoza
Heat a non-stick skillet over medium heat and add a little oil. Place the gyoza in the skillet, flat side down. Cook for 2-3 minutes until the bottom is golden brown. Add a splash of water (about 2 tablespoons), cover, and steam for another 5 minutes.
Serve
Remove the gyoza from the skillet and serve hot with soy sauce or dipping sauce of your choice.
