Prepare the Filling

In a food processor, combine the raw shrimp, green onions, ginger, garlic, soy sauce, sesame oil, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.

Assemble the Shumai

Take a wonton wrapper and place about 1 tablespoon of the shrimp filling in the center. Gather the edges of the wrapper around the filling, leaving the top exposed, and pinch to seal. Repeat with remaining wrappers and filling.

Steam the Shumai

Line a steamer basket with parchment paper and place the shumai in the basket, ensuring they don't touch. Bring water to a boil in a pot, then reduce to a simmer. Place the steamer basket over the pot, cover, and steam for 8-10 minutes until the shrimp are cooked through.

Fry Option

For fried shumai, heat oil in a pan over medium heat. Fry the shumai for 2-3 minutes on each side until golden brown and cooked through.
