Prepare noodles

Place rice vermicelli in a heatproof bowl and cover with boiling water. Soak 3–4 minutes until pliable but still slightly firm. Drain well and cut into 6–8 inch lengths with kitchen shears. Set aside to drain completely.

Cook vegetables

Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and grated ginger and stir 15–20 seconds until aromatic. Add sliced mushrooms and cook 1–2 minutes until softened. Add shredded cabbage and carrots and stir-fry 2–3 minutes until cabbage begins to wilt but remains slightly crisp.

Season filling

Add drained rice vermicelli and sliced green onions to the wok. Stir in soy sauce, oyster sauce, sesame oil, ground white pepper, and 1/2 tsp kosher salt. Toss constantly for 1–2 minutes to evenly distribute sauces and heat through. Remove from heat and fold in chopped cilantro. Transfer mixture to a shallow bowl or tray and let cool to room temperature (at least 15 minutes) so wrappers don’t tear.

Prepare egg wash by beating 1 large egg with 1 tbsp cold water in a small bowl. If you prefer a vegetarian glue, mix 1 tsp cornstarch with 2 tbsp water and warm to thicken slightly.

Lay a spring roll wrapper on a clean work surface with a corner pointing toward you (diamond shape). Place about 2–3 tablespoons of the cooled filling across the lower third of the wrapper, shaping into a log but not overfilling. Fold the bottom corner up over the filling, tuck sides in snugly, and roll once. Brush egg wash along the top corner edge and finish rolling to seal. Repeat with remaining wrappers and filling. You should get about 10–12 rolls depending on filling amount.

Place assembled rolls seam-side down on a tray. Refrigerate uncovered for 10–15 minutes to help seal and firm up, which reduces oil absorption during frying.

Frying

Heat oil in a heavy-bottomed pot or deep skillet to 350°F (175°C). If you do not have a thermometer, test by dropping a small piece of wrapper into the oil — it should sizzle and rise steadily without browning instantly.

Working in batches (do not overcrowd), carefully add 3–4 rolls seam-side down to the hot oil. Fry 3–4 minutes, turning occasionally with tongs, until golden brown and crisp. Adjust heat as needed to maintain temperature and avoid burning.

Use a slotted spoon to transfer fried rolls to a paper towel-lined tray to drain. Let rest 1–2 minutes before serving so the filling finishes cooking and the wrappers crisp fully.

Sweet & Sour Dipping Sauce

In a small saucepan, combine rice vinegar, granulated sugar, ketchup, water, and fish sauce (or soy). Stir to dissolve sugar and bring to a gentle simmer over medium heat.

Mix 1 tsp cornstarch with 1 tbsp cold water to make a slurry. Stir slurry into the simmering sauce and cook 30–60 seconds until sauce thickens slightly. Taste and adjust sweetness or acidity as desired. Add chili flakes or sriracha if using. Remove from heat and let cool slightly before serving.

Finish & Serve

Arrange Thai Crispy Rolls on a platter. Garnish with cilantro leaves and serve with lime wedges and the sweet & sour dipping sauce on the side. Recommend serving hot and crispy.
